Mexican Mac Bake


Made up a Mexican noodle bake using boxed macaroni and cheese.I am not sure what inspired my husband to make this, but here is his recipe:

1 pound ground beef
6 ounce jar of salsa
1/4 cup sour cream
2 Boxes macaroni and cheese (1/2 cup milk and butter to prepare the macaroni and cheese)
8 ounces of taco cheese
1 yellow onion
1/4 cup bread crumbs

Preheat oven to 375 degrees. Brown ground beef and onion, drain well. Prepare the macaroni and cheese as instructed on the box. Mix beef with sour cream and salsa. Mix the macaroni and cheese with the beef mixture. Place into large (9 x 13) casserole dish, spreading out evenly. Top with taco cheese and bread crumbs. Bake 20 minutes is until cheese is melted

  1. This one will be perfect for my husband who LOVES Mexican food & mac n cheese :) He is a vegetarian, but I can easily use the fake meat crumbles instead of the beef. Perfect!
