Expired Yeast Still Rises to the Occasion

The other day I wanted to make a garlic flat bread to go with the spaghetti and meatballs dish. I planned on making a pizza dough recipe and make it into a flat bread. I found three packages of yeast that had a best use by date of 2009. I was a little skeptical about how the bread would turn out, but the yeast still activated and I ended up with a very tasty garlic flat bread to go with my spaghetti and meatballs.

Mmmm, I love garlic flatbread. I think expired yeast can last for quite a while after the date really, although maybe not quite as powerfully. Flatbread is the perfect dish for it!
