
This weekend I was really in the mood for chocolate muffins. I started to search the internet for a recipe, I was not finding a recipe that involved the ingredients I had on hand. So I improvised one that I had in a cook book. I have vanilla in the recipe. I wanted to add it in my batter and forgot it. I felt the the muffin was just a little bland and I think the vanilla would of brought out more of the sweetness of the chocolate. I also added chocolate chips on top of the muffing before baking it thinking the chips would sink a little into the muffing while baking, it did not happen. So next time I might mix the chips in with the batter.
So here is the recipe:
1 1/4 cup flour
1/2 cup of flour
2 t. baking powder
1 beaten egg
3/4 milk
1/4 cup vegetable oil
1 t vanilla
1 cup chocolate chips
Mix the dry ingredients, make a well. Combine the wet ingredients and add to the well. combine until just moistened add the chocolate chips. Lightly grease muffin tin or add paper liners. Fill about 2/3 full. Bake at 400 degrees about 20 minutes or until done.
